Η διαφορά ανάμεσα στο cake flour και το αλεύρι για όλες τις χρήσεις

Όλα εξαρτώνται από την περιεκτικότητα του αλευριού σε πρωτεΐνη. Κάθε είδος αλευριού έχει ένα ποσοστό πρωτεΐνης, το οποίο αντικατοπτρίζει πόση πρωτεΐνη που σχηματίζει γλουτένη περιέχει. Επειδή το επίπεδο πρωτεΐνης συσχετίζεται με το δυναμικό σχηματισμού γλουτένης, είναι χρήσιμο να το σκεφτούμε με αυτόν τον τρόπο: όσο υψηλότερη είναι η περιεκτικότητα σε πρωτεΐνη, τόσο πιο «δυνατό» είναι το αλεύρι.

Όταν φτιάχνετε αρτοσκευάσματα όπως το ψωμί, είναι λογικό να χρησιμοποιείτε ένα δυνατό αλεύρι με υψηλή περιεκτικότητα σε πρωτεΐνη. Ο στιβαρός κολλώδης ιστός που αναπτύσσεται όταν το αλεύρι συνδυάζεται με υγρό έχει ως αποτέλεσμα ψωμί με μαστιχωτή, ζωηρή υφή. Αλλά όταν φτιάχνουμε ένα κέικ, συμβαίνει το αντίθετο. Θέλουμε κάτι με απαλό, λεπτό και τρυφερό τρίμμα. Για να το αποκτήσουμε, θέλουμε να αποθαρρύνουμε την ανάπτυξη γλουτένης και ένας τρόπος για να το κάνουμε αυτό είναι να επιλέξουμε ένα αλεύρι με χαμηλότερη περιεκτικότητα σε πρωτεΐνη (ο άλλος είναι να αποφύγουμε την υπερβολική ανάμειξη, η οποία αναπτύσσει περαιτέρω τη γλουτένη, ακόμα κι αν χρησιμοποιείτε αλεύρι για κέικ) .

Μπορώ να αντικαταστήσω το αλεύρι για όλες τις χρήσεις με το αλεύρι για κέικ;

Ναι, μπορείς. Θα τελειώσετε με ένα παρόμοιο κέικ, μόνο με μια μικρή διαφορά στην υφή και το τρίμμα.

Και τα δύο αλεύρια έχουν το ίδιο αποτέλεσμα στις συνταγές – θα αναμειχθούν σε πανομοιότυπα μείγματα- αλλά τα τελικά αποτελέσματα θα διαφέρουν σε μικρό βαθμό. Ένα κέικ με αλεύρι για όλες τις χρήσεις που αντικαθιστά το cake flour είναι πιο πιθανό να έχει λίγο πιο χοντρό τρίμμα, ενώ ένα κέικ που γίνεται με cake flour θα έχει λεπτότερη, πιο ομοιόμορφη ψίχα και ενισχυμένη τρυφερότητα.
