    Γλάσο Σοκολάτας

      Εκτέλεση

      Βήμα1

      Ζεσταίνουμε το γάλα και τη ζάχαρη ελαφρώς (35 βαθμούς το πολύ) και τα βάζουμε στο κάδο του μίξερ και προσθέτουμε τη μαγιά. Ανακατεύουμε με καλά με σύρμα χειρός μέχρι να διαλυθεί η μαγιά και αφήνουμε για 5-10 λεπτά να ενεργοποιηθεί η μαγιά.

      Προσθέτουμε το αυγό, το αλεύρι, το ξύσμα πορτοκάλι και λεμόνι, τη βανιλίνη και τέλος το αλάτι. Δουλεύουμε τη ζύμη με το εξάρτημα γάντζο σε μέτρια ταχύτητα μέχρι να ομογενοποιηθεί καλά και μετά προσθέτουμε το λιωμένο βούτυρο (προσοχή να μην καίει, το θέλουμε σε θερμοκρασία δωματίου) και συνεχίζουμε να χτυπάμε μέχρι να απορροφήσει η ζύμη όλο το βούτυρο και να αποκτήσουμε μια ελαστική υφή.

      Λαδώνουμε ελαφρά ένα μπολ, βάζουμε μέσα τη ζύμη, την σκεπάζουμε με μία πετσέτα και την αφήνουμε να ξεκουραστεί για 1 ώρα σε θερμοκρασία δωματίου.

      Διαμορφώνουμε τη ζύμη σε μπαλάκια σε μέγεθος ενός καρυδιού, τα σκεπάζουμε με μία πετσέτα και τα αφήνουμε για 30 λεπτά να φουσκώσουν. (Για το κλασικό στρογγυλό σχήμα, ανοίγουμε την ζύμη σε πάχος 1εκ. περίπου και με στρογγυλό κουπάτ κόβουμε σε ντόνατς. Με το μικρότερο κουπάτ τρυπάμε το κάθε ντόνατς και έχουμε το κλασικό σχήμα τους)

      Σε ένα βαθύ τηγάνι ή μία κατσαρόλα ζεσταίνουμε το λάδι (στους 180 βαθμούς αν έχουμε θερμόμετρο) και τηγανίζουμε τα ντόνατς μας για 1-2 λεπτά από κάθε μεριά, μέχρι να αποκτήσουν χρυσαφένιο χρώμα.

      Ακουμπάμε τα ντόνατς πάνω σε χαρτιά κουζίνας για να στραγγίξουν και επαναλαμβάνουμε τη διαδικασία μέχρι να τηγανιστούν όλα.

      Για το γλάσο: Λιώνουμε σε σε μπεν μαρί τη σοκολάτα (τοποθετούμε ανθεκτικό μπολ πάνω σε κατσαρολάκι με νερό που σιγοβράζει σε μέτρια προς χαμηλή φωτιά, χωρίς το μπολ μας να ακουμπάει το καυτό νερό). Προσθέτουμε το ηλιέλαιο και ανακατεύουμε πολύ καλά να ομογενοποιηθούν τα υλικά μας.

      Αφήνουμε να κρυώσει το γλάσο μας για λίγα λεπτά και βουτάμε τα ντόνατς μας από τη μια μεριά. Στολίζουμε με λευκή λιωμένη σοκολάτα ή τρούφα σοκολάτας.
